Meal Ideas
Here are a few of my favorite recipes. Check back each month for new ideas. I hope you enjoy!

Banana Oatmeal
1/2 cup oatmeal
1 cup water
1 tblsp maple syrup
1/2 banana
walnuts

Microwave the oatmeal and water for appx. 2 minutes. Top with the remaining ingredients and enjoy!
Hummus Wraps
HUMMUS
1 can chickpeas - drained and rinsed
4 tblsp tahini
1/4 cup water
1 garlic clove
juice of 1 or 2 lemons
1 tsp cumin
1 tblsp roasted pine nuts (optional)
1/2 tsp Himalayan salt

WRAPS
whole wheat tortillas
cucumbers, tomatoes, spinach, avocados
Combine all hummus ingredients in blender and blend until smooth. Spread hummus on wrap, top with veggies (add any that sound good to you!), wrap it up and enjoy! (recipe courtesy of The Simple Veganista)

Kale Marinara w/Chickpeas over Spaghetti Squash

1 head of Tuscan Kale (washed, veins removed and chopped)
28-oz can of diced tomatoes
4 garlic cloves, chopped
15 oz. can chickpeas, rinsed
1/4 tsp salt
fresh ground pepper
1 1/2 cups of marinara sauce
1 large spaghetti squash

Heat oven to 450. Split squash in half, scrape out the seeds. Cover a baking sheet with foil and place squash halves face down on baking sheet. Bake 30 - 40 minutes. Use a fork to scrape out squash in spaghetti-like strands.

Over medium heat in a large sauce pan, heat tomatoes, garlic, salt, pepper to a boil. Add the kale. Cook down until there is no more liquid and just chunks. Add marinara and heat and reduce to a simmer. Cook for 15 minutes. Add chickpeas and cook for another 5 minutes.

Banana Ice Cream
5 Bananas, sliced and frozen for at least 6 hours

optional: almond milk
optional flavors: vanilla, all-natural peanut butter, cacoa powder, frozen fruit
Put frozen bananas in a food processor and blend until creamy - if needed, add a bit of almond milk to help smooth it out. Add any flavors you want... frozen fruit works well, we enjoy peanut butter, cacoa (chocolate) - finish blending until mixed well. Enjoy!
